Here is my menu plan for the week:
Monday: Chopped Barbecue Chicken sandwiches. This is just leftover chicken mixed with barbecue sauce served on a bun with pickles and onions. Last time we had these, I used this recipe for the hamburger buns. The only thing I did different was to preheat the oven to 350 and cook them for about 12 to 15 minutes.
Tuesday: Fresh Bruschetta mixed with pasta
Wednesday: Chicken macaroni bake
Thursday: Jambalya. I make the Jambalaya from a box of Zatarins Jambalaya, using whatever leftover meat I have. To fix it up, I add an extra cup of rice, a cup of frozen corn and about a cup of black beans. I also add a little extra garlic, cumin, oregano and thyme to taste. I still have Eckrich sausage and chicken in the freezer for the meat.
Friday: Chicken and Salad Snack Wrap
Saturday: Homemade pizza. I am going to attempt a homemade crust one more time. The first time, the crust smelled and tasted like beer/wine. I guess the yeast fermented too much? The 2nd attempt I rolled it too thin and cooked it too long and it was hard as a rock. Anyone have any tips/recipe links for Pizza crust to share? Here is a link to my sauce recipe.
Sunday: Bean, chicken and cheese nachos made with homemade chips.
