Peanut Sesame Noodles

One of my meal planning goals has been to find a few new recipes that the entire family would like and we could add to our rotation.  These Peanut Sesame Noodles were definitely a hit, and the best part is that is diet friendly!  (My son even proclaimed them to be his new 3rd favorite dinner, a high compliment indeed!)

Peanut Sesame Noodles

(Serves 4 and is about 8 points plus not including the chicken)

  • 2 cups fat free chicken broth
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp creamy peanut butter
  • 2 garlic cloves, finely chopped
  • 2 medium scallions, thinly sliced
  • 1 Tbsp lemon juice
  • 2 tsp dark sesame oil
  • 8 oz uncooked spaghetti type noodles (I used whole wheat, but use your favorite)
  • 1 small carrot, finely shredded
  • Hand full of snap peas (optional)
  • Pre-cooked chicken (optional, as much as you want)
  • 1/4 tsp dried red pepper flakes (for an optional kick)
  • 1 Tbsp sesame seeds, toasted (optional)
Cooking Instructions:
1.  Combine the chicken broth, soy sauce, peanut butter, and garlic in a small saucepan; bring to a boil. Reduce the heat and simmer 15 minutes. Remove the sauce from the heat and stir in the scallion, lemon juice, and sesame oil. (I tossed the snap peas and pre-cooked chicken in during the last minute to heat them up.)
2. Meanwhile, cook the noodles according to package directions. Drain and rinse thoroughly.  Combine the noodles, the sauce, carrot, and sesame seeds in a large bowl. Toss gently to mix. Serve warm.

They were enjoyed by all... (Hubby came home later and gave the thumbs up too.)  Notice the hair cut someone gave herself?   :(

  18. It looks yummy. My youngest has had a bad habit of cutting her hair as soon as she learned how to use scissors. She's 5 now and, for the most part, her hair is even. The last time she cut it she only took out a small section.
