Peanut Sesame Noodles
(Serves 4 and is about 8 points plus not including the chicken)
1. Combine the chicken broth, soy sauce, peanut butter, and garlic in a small saucepan; bring to a boil. Reduce the heat and simmer 15 minutes. Remove the sauce from the heat and stir in the scallion, lemon juice, and sesame oil. (I tossed the snap peas and pre-cooked chicken in during the last minute to heat them up.)
2. Meanwhile, cook the noodles according to package directions. Drain and rinse thoroughly. Combine the noodles, the sauce, carrot, and sesame seeds in a large bowl. Toss gently to mix. Serve warm.
They were enjoyed by all... (Hubby came home later and gave the thumbs up too.) Notice the hair cut someone gave herself? :(
