Hi Everyone! We’ve got a lot of chicken and broccoli on the menu this week. I put several meals worth of chicken in the freezer last week and broccoli crowns were on sale… So here you go…
Monday: Creamy Chicken Taquitos
I stumbled across this recipe the other day and have to give it a try, it looks so good! I will probable make half with flour and half with corn tortillas.
Tuesday: Low Cal Chicken Pot Pie
I’ve made this a few times… Delish!
Wednesday: Jambalaya This is a simple meal made from a box of Zatarins Jambalaya. To make it go a little farther, I add an extra cup of rice, a cup of frozen corn and about a cup of black beans. I also add a little extra garlic, cumin, oregano and thyme to taste, This week I am adding Eckrich sausage and maybe a little chicken.
Thursday: Healthy Chicken Tetrazzini
Another good recipe for anyone looking for a light version of Chicken Tetrazzini.
Friday: Taco Muffins
Kid friendly, always a hit.
Saturday: Creamy garlic chicken broccoli pasta
Another good one, perfect for a busy Saturday, when you don’t want to spend a ton of time in the kitchen cooking…
Sunday: Baked Ziti
Makes a ton! You can put half away in the fridge or freezer for a quick meal a few days later or a few weeks later.
