I got a little batch cooking done last week. I put away 10 cups of white beans into the freezer in individual servings and 3 meals worth of cooked chicken.
Here is my menu plan for the week
Monday: Guilt Free Enchilada Bake
This is a recipe I found on Spark Recipes. It is so yummy! If you can limit yourself to only one serving, it is surprisingly low calorie. My only recommendation is to let the cornbread layer cook for longer than 15 minutes. It seems to take closer to 25 minutes in my oven to set up… I’ll take a picture the next time I cook this…
Tuesday: Pasta w/ Chicken
Simple throw together meal for a busy evening. Cooked pasta, pre-cooked chicken, homemade white sauce with some cheese melted in with torn fresh spinach mixed it just long enough to wilt
Wednesday: Enchilada Casserole (Or Enchiladas, depends on how I feel. The ingredients are exactly the same.)
Thursday: Turkey Shepherd’s Pie Great recipe, even has Weight Watcher points calculated.
Friday: Baked Ziti
Sunday: Easy Teriyaki Chicken
