Wow, what a week we have had! We were busy, busy busy… It was my Dad’s birthday on Saturday and we hosted a big family get together at our house. Five families, including seven children stayed the night Saturday. Talk about a house full! The temperature here on Fri, Sat and Sunday was around 110 degrees, I think our air conditioners must have ran the entire time!
I spent Wednesday, Thursday and Friday cleaning the house from top to bottom, so I am definitely ready for a break. Luckily we have a lot of chicken fajita meat left over, so I won’t have to do a lot of cooking for the next couple of days. Here is our menu for the week:
Tuesday: Fajita Chicken Salad and Quesadillas
Wednesday: Beans and Sausage
Sunday: Creamy Cajun Pasta with Sausage
