It’s a new week and a new menu plan!
This week, I am trying to serve dishes on the lighter side of the scale… I have no problem cooking meals that are lower in calories, but the main challenge is to only eat 1 serving!
I really need to shed a few pounds before jean season. I can’t stand to wear pants that are tight around the waist. (Every time the Pajama Jeans commercial comes on, I seriously consider buying some, but I refuse to pay $40 bucks for them… Ha!)
Monday: Fajitas (we still have quite a bit of meat leftover from our party last week)
Tuesday: Double Spinach Bake This is a new recipe, I will post it later if it is a keeper. It serves 6 and is 234 calories per serving.
Wednesday: Skillet Rio Grande (with chicken fajita meat)
Thursday: It will only be my daughter and me tonight, so I will probably just make her a quesadilla and a salad for me.
Friday: Ham and Cheese Fritatta ( I am going to substitute the ham for some turkey bacon I have in the fridge.)
Saturday: Turkey Sloppy Joe’s
Sunday: Chicken Broccoli Casserole
