This Mint Chocolate Chip Ice Cream Recipe is keto, low carb and sugar free. It’s easy to make and hits the spot when you’re craving something sweet and creamy but need to stay on your low carb eating plan!
– Milk – Sweetener – Vanilla extract – Peppermint extract – Mini semisweet chocolate chips – Unflavored gelatin – Optional green food coloring
Sprinkle gelatin over 1/4 cup of milk, set aside for a few minutes.
Mix milk, cream, sweetener, salt, vanilla, and peppermint extract in a bowl. Add gelatin/milk mixture to ice cream, blend, and add food coloring if desired.
