– Pinto Beans – Chicken broth – Pinto bean seasoning – Onion – Bell pepper – Sliced ham

Step 1

Soaking the beans for 8 to 12 hours is an optional step but highly recommended.  To do this, place the beans in a bowl of water, then rinse them in a colander and discard the soaking liquid.

Add the ham to the slow cooker. (I used a ham bone leftover from our last holiday meal.) Never throw the ham bone away! Wrap it in foil and toss it in the freezer.

Step 3

Add beans, onion, green bell pepper and spices to the slow cooker. Add chicken broth and enough water to cover the beans by an inch.  Cook on low for 8 hours, occasionally stirring and adding more water if necessary.

Step 4

If you like a firmer bean, start checking for doneness at the 7-hour mark. Taste and add salt and pepper if needed.
