- 3 large ripe bananas (the riper the better)
- 1 egg
- 1 tsp vanilla
- 1 1/4 cup milk
- 2 cups old-fashioned oats
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup chopped walnuts (plus more for garnish)

Instructions
- Preheat the oven to 375 degrees.
- In a medium mixing bowl, mash 2 bananas with a fork and mix in the egg, vanilla, and milk until thoroughly combined.
- In a separate bowl, combine oats, brown sugar, baking powder, salt, and cinnamon. Stir until combined.
- Add wet ingredients to the dry and mix until everything is thoroughly combined.
- Fold in walnuts
- Pour into a greased 8 by 8 baking dish and top with additional diced bananas and an optional sprinkle of sugar.
- Cook oatmeal for 25 to 30 minutes until set and cooked through.
- Garnish with more bananas and walnuts and a splash of milk.
