Description

Bananas, walnuts, and cinnamon combine to give this Banana Walnut Baked Oatmeal the delicious taste of banana bread!


Ingredients

Scale
  • 3 large ripe bananas (the riper the better)
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 cup milk
  • 2 cups old-fashioned oats
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup chopped walnuts (plus more for garnish)

Instructions

  1. Preheat the oven to 375 degrees.
  2. In a medium mixing bowl, mash 2 bananas with a fork and mix in the egg, vanilla, and milk until thoroughly combined.
  3. In a separate bowl, combine oats, brown sugar, baking powder, salt, and cinnamon. Stir until combined.
  4. Add wet ingredients to the dry and mix until everything is thoroughly combined.
  5. Fold in walnuts
  6. Pour into a greased 8 by 8 baking dish and top with additional diced bananas and an optional sprinkle of sugar.
  7. Cook oatmeal for 25 to 30 minutes until set and cooked through.
  8. Garnish with more bananas and walnuts and a splash of milk.
