BBQ Chicken Meatballs

Description

Ready in just 25 minutes, these Oven-baked BBQ Chicken Meatballs are savory and sweet, bursting with flavor from the tangy BBQ sauce. 


Ingredients

  • 1 lb. ground chicken
  • 1 cup breadcrumbs
  • 1/4 cup finely diced onion
  • 1 large egg, beaten
  • 1/2 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 1/4 tsp. each, salt and black pepper
  • 1/4 cup barbecue sauce

Instructions

  1. Preheat oven to 425F and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, garlic, onion, salt, pepper, oregano, egg, breadcrumbs and half of the bbq sauce. Use hands to mix until thoroughly combined.
  3. Roll chicken mixture into small meatballs. (This recipe makes about 15 meatballs.)
  4. Place each meatball on the baking sheet and bake at 425F for 15 minutes, or until the meatballs are fully cooked (165ºF internal temperature).
  5. Remove the meatballs from the oven.
  6. Glaze the cooked meatballs with the remaining bbq sauce by either brushing the remaining sauce on top or placing the sauce in a large bowl and tossing the entire meatball in the sauce. Place meatballs back on the baking sheet and bake for an additional 3-5 minutes.
  7. Garnish with a bit of parsley or finely sliced green onions and serve.
