  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 11/2 tsp baking powder
  • 1/2 tsp baking soda

  3. Add dry ingredients to wet ingredients. Mix until everything is just incorporated. Do not overbeat!

  5. With a 2 tablespoon cookie scoop, scoop out even size scoops of dough and then roll in a ball in your hand and place on a cookie sheet and slightly flatten with your hand so it’s in a circular shape.
  6. Bake in a pre-heated 350 degree oven until light golden brown, for 8 to 10 minutes. (you want them soft!)
  7. Transfer to a cooling rack and let cool completely before frosting.
