Description

These easy No-Bake Mini Cheesecake Bites feature a creamy cheesecake filling, fresh strawberries and crisp mini phyllo shells. They take just 15 minutes to prepare and make a pretty bite-size dessert for parties, showers and potlucks.


Ingredients

Strawberry topping:

  • 2 cups chopped fresh strawberries
  • 2 tablespoons granulated sugar

Cheesecake filling:

  • 1 - 8 oz package of reduced-fat cream cheese, softened
  • 1/3 cup of granulated sugar
  • 1 tsp of vanilla
  • 3/4 cup of cool whip lite
  • 30 prebaked mini phyllo shells

Instructions

  1. Combine the chopped strawberries with 2 tablespoons of sugar. Cover and refrigerate while preparing the cheesecake filling.
  2. Add the softened cream cheese, 1/3 cup sugar, and vanilla to a mixing bowl. Beat with an electric mixer until smooth and creamy.
  3. Gently fold in the Cool Whip until evenly combined.
  4. Spoon or pipe the cheesecake filling into the mini phyllo shells, dividing it evenly between the 30 shells
  5. Refrigerate the filled shells for about one hour.
  6. Just before serving, top each cheesecake bite with a small spoonful of strawberries. Leave any excess strawberry juice in the bowl to help prevent the shells from becoming soggy.
