No-Bake Mini Cheesecake Bites
If you’re craving something simple, yet sweet and indulgent, these these No-Bake Mini Cheesecake Bites are exactly what you need. You can whip these mini cheesecakes up in just a few minutes!
The Cheesecake Bites I made today feature a fresh strawberry topping, but you can top yours with whatever topping you wish! Any type of summer fruit, chocolate, caramel, or fruit curd will work.
I love making mini desserts. They look great and are fun to serve at parties, but are also great for when you are looking for portion control. Of course, this means only eating a few, lol!
I used low-fat cream cheese and lite cool whip, so my mini strawberry cheesecakes clocked in at 50 calories per cheesecake. The cheesecakes are sweet, rich, and delicious, so you really can’t eat more than a few at a time!

Ingredients + tips for the mini strawberry cheesecakes

- Strawberries | Use fresh strawberries only. I do not recommend frozen strawberries for this recipe. If you don’t have strawberries on hand, any fruit will do. Just chop the fruit into small pieces and mix with sugar. If you think the fruit is sweet enough, don’t add the sugar.
- Sugar | Granulated white sugar works well.
- Reduced-fat cream cheese | You can use any full-fat or low-fat cream cheese in your mini cheesecake bites. I used the reduced fat as I was trying to save calories. I don’t recommend fat-free cream cheese. Make sure your cream cheese has come to room temp for best blendability.
- Vanilla | Use the best vanilla extract you can find. I do not recommend imitation vanilla, but if you can find clear vanilla extract, your cream cheese will be brighter.
- Cool Whip| I used Cool Whip lite for this recipe, but you can use the regular Cool Whip. Or if you happen to have whipping cream on hand, you can whip it up until stiff peaks form and use it instead.
- Mini Fillo Shells | They look like this: (also spelled phyllo)
How to make no bake mini cheesecake Bites
- Chop the strawberries and mix in 1/8 cup of sugar. Set aside in the refrigerator.
- Beat the cream cheese, sugar, and vanilla together using a hand mixer or stand mixer, and then fold in the cool whip.
- Using two spoons, add 1 to 2 tablespoons of the cream cheese mixture to the fillo shells.
- Chill in the fridge for about an hour.
- Top the cheesecake batter with the strawberry mixture right before serving.
Recipe Tips For No-Bake Strawberry Cheesecake
- Make sure the cream cheese has come to room temperature. Cut it into blocks so it mixes more easily.
- Fresh fruit is best for this recipe. Frozen fruit will have too much moisture.
Variations Of No-Bake Cheesecake Bites
- Switch up the fruit topping. All types of fresh berries work great. If you don’t have any fruit, jam or jelly will also work.
- Sprinkle a bit of crushed graham cracker crumbs over the top.
- Top the bites with a chocolate ganache drizzle.
- Top with cherry pie filling or other pie fillings instead of strawberries.
- Add chocolate chips to the cream cheese mixture.
- Chop up your favorite cookies and add the crumbs to the cheese/Cool Whip. I think Oreo cookies would work really well (yum – oreo cheesecakes!), but just use whatever you have in the pantry.
- Add cocoa powder to the cream cheese mixture for chocolate mini cheesecake bites. I often add a teaspoon of instant espresso powder when I make chocolate cheesecake, but if you don’t have espresso, it will still work with just the cocoa.

Do I Have To Bake The Fillo Cups Before Filling Them?
You do not have to bake the fillo cups. They are usually sold frozen and prebaked, so they are ready to use.
Can I Make Mini Cheesecakes the Day Before?
You can make the cream cheese filling a day ahead. (Just store it in an air-tight container in the fridge, but I recommend macerating the strawberries and putting the mini cheesecakes together just before serving.
Can I Make A Full-Size Cheesecake With This Recipe?
You can most definitely use this recipe to make a full-size cheesecake. You can buy a premade graham cracker crust (or make your own) and spoon the topping on. Check out my No Bake Lemon Cheesecake recipe for more tips.
Can I Use A Different Crust For These Mini Cheesecake Bites?
Of course! You can use whatever kind of crust you like. I like using these mini fillo cups as they are ready to go, so there’s no additional preparation required on my part. But, you can also do a graham cracker crust, pressed into a cupcake liner in a muffin tin, or buy premade mini graham cracker crusts (like I used in these mini pudding pies.) You could also cut puff pastry or pie crusts into squares and bake them in a cupcake tin to use.
Can Mini Cheesecakes Be Frozen?
These mini cheesecake bites can be frozen or stored in the fridge in an airtight container. Once topped with the strawberry mixture, they will only last a day or so in the fridge.
