Yep, I am on vacation!
I don’t usually drink adult beverages too much anymore unless it is a special occasion. (I hate hangovers, and I would rather eat something sweet than drink my calories…) However, I do usually have a couple of tropical drinks when we are on vacation.
As I was packing for this trip, I thought it would be a fun little project to share some of the drink recipes we make (or get at the bar) over the next two weeks. And let me tell you, my mom and I loved this project!
First up: The Pineapple Fresa with Coconut Rum.
You can’t go wrong with Pineapple juice, strawberry juice, and coconut rum. (Fresa is strawberry in Spanish.) It’s a flavor combo that just screams tropical beach, lol.
I wasn’t sure we would make this cocktail, but once I found strawberry juice at the Walmart in Cancun, I knew I had to make it first!
Tip: If you can’t find strawberry juice or strawberry nectar at the store, you can blend up a few fresh strawberries to make your own. (Strain out the excess pulp if desired.)

I also made a version for the kids with just juice, but, IMO the alcohol version with the coconut rum was definitely tastier.

Ingredients
- 2 ounces pineapple juice
- 2 ounces strawberry juice
- 1-ounce coconut rum (like Malibu rum)
- ice cubes

Instructions
- Add all of the ingredients, including ice to a pitcher and shake/stir around until chilled.
- Pour into a pretty glass.
- Garnish with pineapple or strawberries.
- Enjoy!
