Menu Plan Monday – 07/22/13

Happy Monday everyone!  Here is our menu for the week.  It’s a light plan since I am trying to watch eat until we go on vacation:

Monday:  Enchilada Chicken Tacos:  (I do this in the crock pot and it is an awesome way to cook a bunch of chicken for several meals.  I add a bunch of chicken breasts to the crock pot and cover it with a can of enchilada sauce and a cup of salsa.  After 4 to 6 hours, remove the chicken from the crock pot.  Shred it, add a package or 2 of taco seasoning and mix together.  Add several spoon fulls of the cooking liquid back to the chicken mixture and mix.  This chicken is so yummy and you can use it in so many dishes!)

Tuesday:  Quesadillas and salad

Wednesday:  Enchilada Chicken Baked Potatoes

Thursday:  Peanut Sesame Noodles (This is the most awesome WW recipe.)

Friday:  Sending the hubby and kids out to dinner and I will just have a salad.

Saturday:  Black bean burgers (Morning Star Farms)  These are so yummy and super easy!

Sunday:  Slow Cooker Cashew Chicken.  This dish is actually pretty low cal.  I’ll serve it over broccoli for me and leave off the cashews.  (I am not going to even buy cashews, they tend to disappear way before its time to make the dish!)

  1. Love that you have lighter meals on this plan! I'm always looking for meals that are a bit healthier, but still taste amazing. I was wondering if you had the link for the Peanut Sesame Noodles? Those look amazing and I want to try them out!

    1. I cant believe I forgot to add the link in there… That's what happens when you try to watch tv and blog at the same time! I just added it to the post.
