It’s that time of the month again. (no not that one- wink wink…) It’s time for the Secret Recipe Club reveal!
My assigned blog this month was Feasts on the Cheap. Feasts on the Cheap is written by a mother daughter team, Mary Anne and Mariel. They have way too many delicious looking recipes to count, so be sure to check out their site if you have a chance!
I’ve been working really hard to stick to a diet for the last few weeks, and I was so happy to see they had several yummy looking salad recipes for me to try. I wanted to make them all, but I settled for one of the more simpler salads that would be easy to fine-tune to my current (sparse) meal plan.
I went with the Mixed Green Salad with Walnuts and Dried Cranberries.
Does this not just scream HEALTHY LUNCH! to you?
I added a little chicken (100 grams – yes, I weighed my chicken…) and used a ready made dressing. (Ken’s Lite Raspberry Walnut Vinaigrette, yummy!) And what you don’t see is the other 4 cups of spinach I added after I took these pictures.
The beauty of this salad is that you can pretty much add whatever you like that you have in the fridge. I totally forgot that I had some boiled eggs and celery in the fridge. Chopped up, they would have been an excellent addition to this salad…
You can see the full salad and their dressing recipe here: Mixed Greens with Walnuts and Dried Cranberries.
