Healthy Lunch Ideas: Mixed Greens with Chicken Walnuts and Dried Cranberries

It’s that time of the month again. (no not that one- wink wink…) It’s time for the Secret Recipe Club reveal!

I’ve been working really hard to stick to a diet for the last few weeks, and I was so happy to see they had several yummy looking salad recipes for me to try. I wanted to make them all, but I settled for one of the more simpler salads that would be easy to fine-tune to my current (sparse) meal plan.
I went with the Mixed Green Salad with Walnuts and Dried Cranberries.
Does this not just scream HEALTHY LUNCH! to you?
I added a little chicken (100 grams – yes, I weighed my chicken…) and used a ready made dressing. (Ken’s Lite Raspberry Walnut Vinaigrette, yummy!) And what you don’t see is the other 4 cups of spinach I added after I took these pictures.
The beauty of this salad is that you can pretty much add whatever you like that you have in the fridge. I totally forgot that I had some boiled eggs and celery in the fridge. Chopped up, they would have been an excellent addition to this salad…
