Menu Plan Monday – 11/14

Hi everyone!  Here is our menu for the week!

Monday: Barbecue Chicken Wraps. I will be using my leftover Barbecue Chicken Breasts that I made the other day. This is very easy, I just layer shredded barbecue chicken, shredded cheese and some coleslaw on a tortilla and walla… A yummy wrap!

Tuesday:  Enchilada Casserole.  I am doubling this one up and putting it in the freezer for later…

Wednesday:  Bourbon Chicken in the Slow Cooker.  This is a recipe I have never tried, if it is any good I will post it later this week

Thursday:  Ham and Cheese Hash Brown Frittata.  This is a family favorite, so easy and everyone loves it!

Friday:  Leftovers

Saturday:  Turkey Burgers on the grill with homemade sweet potato fries.  I saw a suggestion to coat the fries very lightly with corn starch to get them extra crispy, I am going to try it…

Sunday:  Black Bean Casserole  This one sure looks good.  I know if I serve this with chips it will a hit!

    The Ham and Hashbrowns look delicious.
    I'm also curious about coating the sweet potatoes with corn starch. The one time I tried making sweet potato fries they were extremely limp.

    Thank you for the suggestion for the sweet potato fries, I am always trying to figure out how to make mine crisper. I'll have to give that black bean casserole a try too.
