I hope everyone had a wonderful Holiday with their families! We sure did. I am sorry to see my hubby go back to work tomorrow. Hopefully he will have an easy day…
Well, it’s 11pm, and I’m laying on the couch trying to think about this weeks menu. I am still so full from dinner that I don’t want to think about food… ( If it were just me, I would be eating salad every day this week.)
Luckily, I don’t have to think too hard because this is the week of leftovers! We have chili, Queso, tamales, breakfast casserole and a ton of ham and all the sides. Here is our menu for the week:
Monday: Tamale casserole with leftover Chili and Queso. To make the casserole, I will layer tamales, black beans, queso, and chili. Cover with foil, bake at 400 for 25 minutes, then I will remove the foil, sprinkle crumbled Fritos and a little shredded cheese and bake for another 10 to 15 minutes.
Tuesday: Ham Dinner (leftover Christmas dinner)
Wednesday: Ham and Cheese Frittata
Thursday: Taco Salad
Friday: Ham and Cheese Paninis
Saturday: Out of town
Sunday: Out of town
