My assigned blog this month was Making Memories with your Kids, written by Erin. I enjoyed reading through all the kid friendly recipes she had and was torn between a couple different ones to try. I narrowed my choices down to her Cream Puff recipe, S'more Brownie pie or Crock Pot refried beans. I couldn't decide and asked my hubby which he would like me to make since Father's Day was coming. He thought the Cream Puffs sounded yummy, I've never tried to make cream puffs before and since I had strawberries in the fridge to go with them, that's what I decided to make!
Wait a minute... That picture doesn't look much like a cream puff, does it? Well... Have you ever heard the saying, if you can read a recipe, you can cook? I wouldn't say that is 100% correct, you also need patience and maybe a little reading comprehension helps to... and oh yeah, I tried to make cream puffs... This is how they turned out. (I have a pretty good idea what went wrong and someday I'll try them again.)
With time running out and I didn't want to run to the store, I opted to make her BLT Salad for dinner. I was just t the store, so I had everything on hand, except red onions, but I probably would have left them out anyway.
The salad was so yummy and easy, even my little Missy who normally complains about salads, gobbled it up! Best part is, it only took a few moments to throw together- just the amount of time to boil the pasta. (I used bagged romaine lettuce, chicken from the freezer and store bought bacon bits to speed up the prep.)
