Menu Plan Monday #101 – 1/28/13

Happy Monday Everyone!  It’s that time of the week again…

I didn’t do any real cooking Friday, Saturday or Sunday of last week.  We had a water line break up the road and were left without water from Thursday night to early Saturday evening.  We still are under a boil water notice, hopefully that will be over on Monday, the water district sends their test samples out and it takes 24 hours to find out it there is an unsafe level of bacteria in the water.

On the positive side, making coffee with purified/bottled drinking water is definitely the way to go, it makes the coffee taste so much better!

Here is our menu for the week:

Monday:  Leftover Meatball Stroganoff.  We went to Ikea this past weekend and right by the check out lane they had a family-sized freezer meal of Swedish Meatballs, mashed potatoes and gravy for 9.99.  I went ahead and grabbed one as I am sure many other people do after hiking miles through Ikea and then feeling too tired to cook dinner…  This meal was enough for 8 so I am going to figure out how to make beef Stroganoff with my leftover meatballs and gravy. If it works out, I’ll come back and post the recipe.

Tuesday:  Grilled Burritos and salad

Wednesday: Slow Cooker Cashew Chicken.  (I did not make this last week)

Friday:  I’m not going to cook tonight, we’ll either do leftovers of pizza…

SaturdayCreamy Lemon Chicken Pasta

Sunday:  Pot Roast with onions, potatoes and carrots in the Crock Pot (Hopefully I will have enough leftover to make something good next week, but if history is any indication, this wont be the case…)
