Hellmann's Extra Special Chicken Salad Recipe

With summer right around the corner, our days are getting busier, which means I sometimes have less time to prepare dinner.

Just last night, I was tired and really didn’t want to cook what I already had planned. Luckily, after spending just a few minutes browsing through all the recipes on the Hellmann’s website, I was able to whip up their Extra Special Chicken Salad Recipe in less than 5 minutes.  (I was even able to search by ingredient, which was great for me since I always have pre-cooked chicken in the freezer.)

I served the chicken salad on my kids favorite rolls with some of our homegrown tomatoes.  Everyone loved it. The recipe was so easy!  

Hellmann’s Extra Special Chicken Salad (I think it is the bacon that makes it extra special, Ha!)

INGREDIENTS
2 cups cut-up cooked chicken
2/3 cup Hellmann’s® or Best Foods® Light Mayonnaise
1/3 cup quartered red grapes
2 slices turkey bacon, crisp-cooked and crumbled (I just used some bacon crumbles I had in my pantry.)
 
DIRECTIONS
In medium bowl, combine all ingredients. Season, if desired, with salt and ground black pepper and serve on lettuce leaves. Chill, if desired.

Variation: For Chicken Salad Sandwich Wheels, prepare chicken salad as above. Cut 12 slices whole wheat bread into 3-1/2-inch rounds. Evenly spread chicken salad onto 6 rounds, then top with remaining rounds. Roll cut edges in 2/3 cup toasted sliced almonds.

Also great with Hellmann’s® or Best Foods® Canola Cholesterol Free Mayonnaise or Hellmann’s® or Best Foods® Low Fat Mayonnaise Dressing.
