Happy Monday Everyone!  Here is our menu for the week:

Monday:  Chicken Verde Tacos

Tuesday:  Quesadillas (with leftover chicken)

Wednesday:  Mini Ham and Cheese Mini Quiche

Thursday:  Dad and Kids are going out for Pizza

Friday:  Healthy Sloppy Joes

Saturday: Creamy Rigatoni with Sausage and Red Peppers

Sunday:  Empanadas 

We still have quite a few strawberries left, so I will probably make more Healthy Chocolate Dip.

    looks like some delicious meals at your house this week. Empanadas make me think of a special friend of mine, who introduced me to them several years back. Mine have never been as good as hers, but maybe I'll try them again soon. Enjoy!
