Today I’m sharing this yummy recipe for a super easy, Potato, Egg and Cheese Waffles (with bacon too!)

Super easy, Potato, Egg and Cheese Waffles (with bacon!)Shout out to Simply Potatoes for teaming up with me to bring you this yummy breakfast recipe.

When it comes to weekend breakfasts at our house, if you want something other than cereal or oatmeal; hubby tends to be the cook. I get up early during the week with the kids and for some reason, I just can’t find the motivation to cook a big breakfast on the weekend.   I do cook pretty much every night, though.  Sometimes it’s an elaborate spread and other times it’s just something simple.  (I like to cook, but I want it to be easy.)

On busy nights, my trick for keeping meal prep easy is to use pre-prepared food items- like pre-chopped and pre-washed bagged veggies and pre-cooked and shredded potatoes.  (Like the Simply Potatoes – you can get them cut, diced and even mashed! (Visit the Simply Potatoes Breakfast Lovers page for more recipes.)

These bacon, potato, egg and cheese waffles are great for breakfast, but they’re even better for dinner.  The kids are always excited when they find out we’re having breakfast for dinner.  (There’s just something about the idea of breakfast foods at dinner time that makes it feel like an extra special treat and this meal is perfect for the nights dad works late.)

I used my waffle maker for this recipe, but if you don’t have a waffle maker, they would be just as yummy scrambled or cooked pancake-style!

  1. We loved this. I used Potatoes O’Brien and it was over the top good. We dipped the waffle in little ramikens of pancake syrup. Yum……thanks for the recipe.

  2. Have you tried freezing and reheating? And how did you do it?

    1. No I haven’t tried freezing and reheating. But I would think you could defrost them in the microwave for about a minute and then pop them in the toaster to make them toasty. How awesome would that be?

  3. Made these with Hidden Valley seasoned frozen hashbrowns, thawed. I thought they were pretty good with salsa and sour cream. Husband wanted a little syrup on it next time. We’ll see.

  4. These sound amazing. Do you think these could be made in advance and frozen? Then reheated in a toaster oven for a couple minutes? Kinda like a breakfast on the go

    1. I am certain you could! Such a smart idea. I haven tried it, so I can’t recommend a heating time. If you do give this a shot, be sure to come back and let us know how long the waffles took to reheat.

  5. What a great idea, these savory waffles sound so good!!!! They would be so good for a big weekend breakfast, or even for breakfast for dinner!!! They sound amazing!!!

  6. I am practically drooling over here!! I may just go out before the hubby wakes up and go buy what I need to make these for breakfast this morning!

  7. I am most interested in the recipe for the chicken salsa verde casserole. We love casseroles in our home because they are a great way to clear the cupboards.

  8. I love this! I'm more of a savory person than sweet for breakfast so I love the combo of flavors in this "waffle"

  9. Loaded potato and buffalo chicken casserole. I think my hubby would love this. But I can't wait to try your recipe. Pretty sure my kids would love them.

  10. My waffle maker doesn't get pulled out enough! My husband saw these on the computer screen and now he wants them for breakfast today so I hope I win so I can make them soon. 🙂

  11. How insanely clever is that? I'm always on the hunt for fast, yummy food that I can do in the morning and this is just the thing I needed. Thank you for sharing!

  12. Your recipe sounds wonderfully yummy. We love breakfast for supper also. I liked the sound of Cheesy Hash Brown Cups on the Simply Potatoes website. Thanks for a chance to win a months supply.

  13. We've bought these in the past, very convenient. Although I only thought of them as breakfast-y, so I'd love to try something savory like the Potato Taco Lasagna!
