Baked Corn Dogs

My kids love Corn Dogs! I don’t own a fryer, and would never fry anything on my stove top… Just too messy, and I dislike cleaning big messes.
Baked Corn Dogs

I have been looking for a good Baked Corn Dog recipe. The one I had was more of a “pig in the blanket” style than a corn dog. While searching the internet, I came across this recipe.
I wanted to try it! I did not have any self rising corm meal, so I made a few modifications to the recipe, using ingredients almost anyone might have in their pantry.
Baked Corn Dogs
3 tablespoons baking powder
1 1/2 teaspoons salt
2 3/4 cups cornmeal, PLUS 3 tablespoons cornmeal
3 eggs
1/4 cup oil
1 1/2 cups milk
1/2 cup sour cream
1/2 cup sugar
1/4 cup oil
1 1/2 cups milk
1/2 cup sour cream
1/2 cup sugar
10 to 11 hot dogs
Directions:
Preheat oven to 425°. First combine the cornmeal, salt and baking powder. Using a hand blender, mix the rest of the ingredients together, except the hot dogs. Pour the cornmeal mixture into a very greased 10 x 14 inch baking dish. Place the hot dogs in the batter according to the diagram below. (Sorry, I forgot to take a picture of the hot dog layout…)

Bake for 25 to 35 minutes or until corn bread is cooked through. Let cool slightly, then with a sharp knife cut around each hot dog insuring each dog is surrounded by corn bread.
