My parents have a house next door to ours and when they’re in town, we often get together for dinner. Sometimes we plan ahead and really do it up. Occasionally we’ll go out to eat, but most of the time we keep it fairly easy and casual, and just go with what I already had planned for dinner or maybe something from the freezer.
This past Friday, we got the entire family together for dinner. I definitely wanted to keep the meal easy so I wouldn’t be too worn out and could relax and enjoy myself. My mom brought over homemade banana pudding for dessert and I made BBQ Pulled Beef Brisket Stuffed Baked Potatoes.

My whole family loves slow smoked barbecue, but trips to our favorite bbq joint can get expensive and we usually don’t plan ahead enough to smoke a brisket ourselves. ( I gave hubby a smoker as an anniversary gift one year, but even with a fancy smoker, it takes 10 to 12 hours to smoke a brisket!)
I know we’re not the only family who loves barbecue, but not the hours of prep work involved! I have a little secret to share, I’ve discovered a new staple meal for my freezer: Farm Rich Smokehouse BBQ. Farm Rich Smokehouse BBQ has no artificial ingredients, no preservatives and can be ready in just minutes for a perfect family BBQ meal any night of the week!

There are several protein and sauce combinations to choose from and even a pulled pork with just a dry rub and no sauce. (Perfect for my no sugar diet!)

For our Barbecue Stuffed Baked Potatoes, I used the Pulled Beef Brisket. I cooked the potatoes and the meat in the microwave, so everything was ready in a short amount of time.
I set everything up buffet style and let everyone serve themselves and fix up their potatoes how they liked. Could not have been any easier!

You’ll need:
- Potatoes

- Fixins’ (Butter, Cheese, Onions, Sour Cream, bacon, etc…)
Bake your potatoes with your favorite method. (I did these in the microwave, but when I have the time this is my favorite method.) Heat everything up and stuff your potatoes. That’s it!
