(Clean out your Fridge) Taco Stromboli

I have a few recipes that are excellent for using up leftovers. This is a great one I came up with just for that purpose…
This recipe is very flexible, you can pretty much use whatever you have leftover in your fridge. Beans (any kind, even re-fried), rice, onions, peppers, corn, chicken, beef or pork. Salsa, cream cheese, plain yogurt, shredded cheese. The list goes on…
These are the ingredients I used in this Stromboli:
Thin and crispy refrigerated pizza dough
Leftover ground beef
Black beans
Corn
Shredded cheese
Salsa
Plain Greek yogurt
Taco Seasoning
Here is how I made the Taco Stromboli (almost the exact same way I made my Ham and Cheese and Leftover Meatloaf Stromboli.)
Throw all your ingredients in a bowl and mix it up!
Don’t forget the seasonings:
Lay out the pizza dough and spread your filling mixture out evenly. Top the filling with a bit more cheese.
Roll it up and place it on a greased cookie sheet, seam side down. Using a serrated knife, cut a few slits in the top to reduce pressure when cooking. Cook in a preheated oven at 400 degrees for about 20 minutes. After 20 minutes, you may want to cover it with foil to prevent further browning then cook for another 5 to 15 minutes.
I will be linking up to some of the linky parties listed here.

That is SUCH a good idea!!! I've done that with Pizza too, but hadn't even thought of tacos. Thanks! 🙂
This sounds fantastic!! I saw you over at Full Plate Thursday and can't wait to try this with my family!!
This is brilliant! We've made taco pizza before, but I never thought of just rolling it up and making stromboli! It looks so yummy too!
oh YUM… wish I had this in my kitchen right now.

I've seen taco in many different ways, but can't remember seeing it as Stromboli. It looks and sounds very good. Just a unique new way for an old recipe. I also love Greek yogurt! Thanks for sharing you creative inspiration at Sunday's Best Par.tay!
This sounds delicious! I love using Greek yogurt in dishes like this.
Love this! Looks super yummy. My mother-in-law use to call leftovers when my hubby was a kid — must goes. Everything in the fridge went in to making some sort of meal to finish them off.
