Menu Plan Monday – 5/7/12 – diet version

Happy Monday Everyone!  Here is our menu for the week.

Monday:   Hamburger bun pizzas for the kids and Flat out Barbecue Chicken Pizza for me and the hubby.  Have you seen these flat out breads?  They are really big and only about 100 calories each.

Tuesday:  Cobb salad.  I am going to make a big salad with lots of boiled eggs, chunks of ham and cheese.  Of course the kiddos will get more ham, eggs and cheese than lettuce and we will get more lettuce than ham, eggs and cheese.  Should be good, we’ll see how it goes…

Wednesday:  Boca Burgers.  I have a package of the spicy black bean flavor in the fridge.  The kids have never had them before, I hope they like them…

Thursday:  Asian Chicken Salad.  I have served this before and everyone seems to like it.

Friday:  Ham and Cheese Frittata

Saturday:  Meatloaf muffins

Sunday:  Salad and Taco Stromboli

I will also whip up one more batch of my Strawberry Scones for the freezer this week.  Kids loved them and  after I prepare the dough I can freeze them and then cook them 2 at a time…
