Menu Plan Monday – 06/24/13 (and our camping trip)

Happy Monday everyone! Did anyone notice I didn’t post a menu plan last week? Well don’t fret… I did have a plan and mostly stuck to it. We’d gone “camping” the weekend before (though I am not sure staying in a luxurious air conditioned cabin, with its own wireless router, next to other family members in their RV’s, camping…) We all had so much fun, but were completely worn out and it was Tuesday night before I remembered I hadn’t posted my menu…
I have to give a little shout out to this RV Park in Kerrville, Texas. It’s called the Buckhorn Lake Resort and was just about the prettiest RV park we’ve stayed at. (Of course, we had spots overlooking the “lake” which probably made our stay so much better….)

Monday: Chili Cheese Hot Dogs (yummy!)
Tuesday: Oven Baked Fajitas
Have you tried these yet? If not, You’ve got to add then to your list! I made these last week too and my son asked if we could have them every day. (We had a jar of Tostitos queso left over from our camping trip, I added a dollop of the queso and real sour cream to the fajita tacos and they were unbelievably good!)
Wednesday: We’ll eat out somewhere after our errands
Thursday: Salad and Quesadillas
Friday: Possible dinner and a movie this night?
Saturday: Chili & Cheese Baked Potatoes
Sunday: Creamy Chicken and Asparagus Pasta
