Menu Plan Monday – 4/29/13

Happy Monday Everyone! I am sitting here looking at my calendar, can you believe we have only one more month of school left? I can’t believe how quickly this year has flown by…
I have a fairly simple menu planned this week, mostly quick and easy meals:
Monday: No cooking, hubby is bringing the kids home from Nana’s and will most likely eat on the road
Tuesday: Easy Chicken Fried Rice
Wednesday: Activity night – Out
Thursday: Cobb Salad
Friday: Ham and Cheese Frittata (This should polish off my cubed ham.)
Saturday: Pasta w/ White Beans and Chicken
Sunday: Crock Pot Carnitas – I just set up a reminder in my calendar to pull the pork roast out of the freezer on friday… I hate it when I forget to defrost stuff!
