Happy Monday everyone! My kids are back home after a long trip to see their cousins and then Nana and Papa, so I have to get back on track with our meal planning. I enjoyed the little meal planning hiatus, in fact, I was actually on a unintentionally forced diet, since the only food in the house for the last 10 days was eggs, lunch meat, smart ones TV dinners, apples, lettuce and frozen chicken breasts!
Luckily, I made it to the grocery store on Saturday and we are now stocked up. Here is what I have planned:
Monday: Barbecue chicken breasts in the crock pot. (I am doing a bunch so we can eat 3 meals from this…)
Tuesday: Barbecue chicken Pizza (This is so simple and delicious, you have to try it!)
Wednesday: Chicken and Broccoli Pie (I brought home a 10 pound bag of chicken breasts and a huge bag of broccoli from Sam’s)
Thursday: Barbecue topped baked potatoes (Using my Perfect Baked Potato recipe.)
Friday: Fried egg sandwiches
Saturday: Jason’s Deli and then a family night at the movies (We’ll probably see Despicable Me.)
Sunday: Skillet Lasagna (lightened up)
