Menu Plan Monday – 7/16/12

Happy Monday everyone!  Here is our menu for the week:

Monday:  Taco Skillet

Tuesday:  BLT Pinwheels (or wraps)

Wednesday: Enchilada Casserole (using the leftovers form the taco skillet)

Thursday:  Quesadillas and Salad

Friday:  Chili Cheese Hot Dogs!

Saturday:  Penne with Chicken, Spinach and Tomatoes

Sunday:  I have a couple of new recipes to try.  Either a healthier Fried Rice (w/ chicken) or a homestlye chicken and rice dish.  I have the ingredients for both, but I am still undecided which to try.  Which do you think I should try?

I have an entire bunch of banana’s that are super ripe, so I am going to make 2 loaves of this super easy banana bread.  (One for now and one for the freezer!)

    Oh, put me down for the BLT pinwheels too – that looks fanTAStic! 🙂 I'm waiting for good tomatoes, too – so far, I've gotten a couple of grape tomatoes here and there, but I want some slicing tomatoes. . .

    A fried rice dish, with lots of fresh veggies, sounds like a great summer dinner to me, too.
