Yep, I am on vacation!
I don’t normally drink adult beverages too much anymore unless it is a special occasion. (I hate hangovers and I would rather eat something sweet than drink my calories…) However, I do usually have a couple of tropical drinks when we are on vacation.
As I was packing for this trip, I thought it would be a fun little project to share some of the drink recipes we make (or get at the bar) over the next 2 weeks.
First up: The Pineapple Fresa with Coconut Rum. (Be sure to check out my round up of all the Best Tropical Drinks we made while on vacation.)
I wasn’t sure we would make this one, but once I found strawberry juice at the Wal-mart in Cancun, I knew I had to add it to the list. You can’t go wrong with Pineapple juice, strawberry juice and coconut rum. This recipe was so simple and delicious, you have to try it! (I made a version for the kids with just juice, but the alcohol version was definitely tastier.)

Pineapple Fresa w/ Coconut Rum:
Ingredients: (makes 1 drink- but you should definitely multiply it for more)
- 2 ounces pineapple juice
- 2 ounces strawberry juice
- 1 ounce coconut rum (like Malibu rum)
- ice cubes
- Add all of the ingredients, including ice to a pitcher and shake stir around until chilled.
- Pour into a pretty glass.
- Garnish with pineapple or strawberries.
