Pumpkin Brown Butter Cupcakes

Happy Monday everyone, it’s reveal day for the Secret Recipe Club! My assigned blog this month was Jess’s blog, Life’s Simple Measures.
I spent some time browsing through all her different recipes and finally settled on the Pumpkin Brown Butter Cupcakes. They sounded so good and I had a can of pumpkin in my pantry that was begging to be used.
My little guys ride the bus home from school and have gotten in trouble a few times recently over rowdy behavior. (Too loud, getting out of their seats, etc. I told the bus driver to separate them.) I have been having to check with the bus driver every day for a report. They both had been good every day this week so I decided to get out my mini cupcake maker and make these adorable (and tasty) mini cupcakes as a surprise after school snack.
I followed Jess’s recipe almost exactly except I didn’t make the Brown Butter Frosting. (I know, I know, that was an important part of this cupcake recipe, but I was running out of time and wanted the cupcakes finished and put away before the kids got home. Plus we were leaving for a camping trip that I hadn’t even begun to start packing for.) I had some cream cheese cool whip frosting in the freezer, so I just mixed in some pumpkin pie spice and used that, and of course finished them off with these cute fall sprinkles.
