Easy Southwest Chicken Pizza

Today, I have a super quick and easy, but oh so yummy, dinner idea to share. Refried beans, salsa, chicken and Tex-Mex Flavors Blend together in this Southwest Chicken Pizza that is sure to please everyone in the family!

Easy Southwest Chicken Pizza Dinner idea: Ready in about 15 minutes.

Our family loves pizza! Doesn’t even really matter what style pizza it is, lol. All I have to do is add sauce, toppings and cheese to a crispy thin crust, bake it, and everyone will devour it. 

Every. Single. Time.

The beauty of this Southwest Chicken Pizza is that it’s just one of those recipes, that isn’t really a “recipe”.  

It’s just an idea, so flexible, you can pretty much use whatever Tex-Mex ingredients you have on hand as toppings and it will be AWESOME!

On the day I made this pizza, I had a store bought pizza crust that needed to be used, but didn’t have any pizza sauce or Mozzarella to make a regular pizza.

What I did have was an open can of refried beans…  So Southwest Chicken Pizza it was!

To make a Southwest Chicken Pizza, you need:

Ingredients:

  • Pizza crust (homemade or store bought)
  • Refried beans (I didn’t measure, but used about a cup- just use what you have or as much as you need)
  • Salsa (Thick and chunky works best)
  • Shredded mexi-blend or colby jack cheese)
  • Taco seasoning
  • Diced Chicken
  • Toppings:  Whatever you have on hand (topping ideas: Black beans, defrosted frozen corn, pica de gallo, chopped tomatoes, black olives, green onions diced green chiles, sauteed onions and peppers, lettuce, sour cream, cilantro)
  • Optional: sour cream and taco sauce

Southwest Chicken Pizza Tips:

  • I recommend pre baking your crust to keep it crispy. (Even if you use a strore bought crust, co ahead and pre bake it for a few minutes)
  • Don’t overload the pizza with too many toppings. The beans are heavy and too many toppings will make it difficult to hold and eat.
  • The Southwest/sour cream drizzle I use really made the pizza, don’t skip it. (To make the sour cream drizzle, add a tiny bit of water and smidge of your favorite hot sauce to the sour cream until it’s the right consistency to drizzle. I used taco bell sauce – not too spicy and the kids love it!)

Variations on the Southwest Pizza

  • Use leftover fajita meat and peppers
  • Chorizo would be awesome instead of chicken (If you like Chorizo, that is)
  • Use taco flavored ground beef instead of the chicken and add crushed corn chips and avocado chunks.

Ingredients

  • Pizza crust (homemade or store bought)
  • Refried beans (I didn’t measure, but used about a cup- just use what you have or as much as you need)

  • Taco seasoning
  • Diced Chicken
  • Toppings:  Whatever you have on hand (topping ideas: Black beans, defrosted frozen corn, pica de gallo, chopped tomatoes, black olives, green onions diced green chiles, sauteed onions and peppers, lettuce, sour cream, cilantro)
  • Optional: sour cream and taco sauce

Instructions

  1. Mix together the refried beans and a couple tablespoons of taco seasoning.  (Just give it a taste to make sure it is flavorful enough.) If the refried beans are too thick, you can thin them out with a bit of water or some of the salsa.
  2. Toss the diced chicken with about a tablespoon of the taco seasoning.
    Spread the refried beans over the pizza crust.
  3. Add a thin layer of salsa (I recommend the thick and chunky so the salsa is not too watery, if using regular salsa, be careful not to use too much.  You don’t want the center of the pizza to be too soggy.
  4. Add the diced chicken to the pizza and any other and any other topping you are using that can be baked.
  5. Top with a couple handfuls of the shredded cheese and bake pizza in a pre-heated oven according to the directions of the pizza crust you are using.  (I will sometimes pre-bake my pizza crust for a minute or two, whether the directions call for it or not…)
  6. After the pizza has finished baking, top with your cool ingredients, such as tomatoes, lettuce cilantro, sour cream.
  7. I added a drizzle of taco sauce (taco bell taco sauce- love that stuff and buy it by the bottle) and sour cream.  To make the sour cream drizzle, add a tiny bit of water to the sour cream until it’s the right consistency to drizzle.
