If you love coconut rum drinks, you don’t want to miss this Frozen Coconut Mojito!  The delicious flavors of lime and coconut come together in this ultimate summer frozen cocktail.

Frozen Coconut Mojito

Frozen coconut mojito recipe:

We went camping last week to the most amazing RV resort on the Guadalupe River.  The place had a fabulous pool and so many activities for the kids on top of the gorgeous river location.

After a fun day in the sun, the hubby and I were in the mood for a summer cocktail.  Since there was a Walmart right down the street, I sent him off to grab us a few supplies.  (Our camper is stocked with many of my favorite gadgets, like my Keurig Mini and Nutri Ninja, but no adult beverages, lol.)

He likes a Michelada (beer-based Bloody Mary) and I love coconut rum drinks. (In fact, I did an entire summer series a few years ago based on tropical drinks.  See them all here: Tropical Drink of the Day.

I also love a good Mojito and the combination of the coconut and mint in this coconut mojitos recipe was super yummy! One of the best frozen coconut rum drinks IMO. The photos just don’t do this drink justice.

How to make a Coconut Mojito Recipe:

To make this coconut Mojito, its as simple as tossing a few ingredients into the blender – that’s it! (printable recipe card at the bottom of the post.)

You’ll need:

  • coconut rum
  • Creme of Coconut (the sweetened stuff made for drinks)
  • limes
  • fresh mint leaves
  • ice

Which coconut rum is best?

Malibu Rum is alway a great stand by when it comes to coconut rum.  It’s sweet, tastes yummy and is available everywhere.  My favorite coconut rum is actually Bacardi Coconut Rum mostly due to the fact that the Bacardi version has fewer carbs than the Malibu rum.  (Malibu : 6.5  Bacardi coconut: 3.5 grams of carbs.)

Of course, since this Frozen Mojito recipe has the creme de coconut in it, it is NOT low carb.  But, often I am sticking to low carb and want a low carb coconut rum to mix with my Coke Zero.

Ingredients

Scale
  • 4 cups ice
  • 1/2 cup coconut rum
  • 1/2 cup cream of coconut
  • 1/4 cup fresh lime juice (juice of 2 limes
  • 6 fresh mint leaves
  • Lime wheels, for garnish
  • Mint leaves, for garnish3

Instructions

  1. Add all of the ingredients into a blender and mix until smooth.
  2. Pour into serving glasses.
  3. Garnish with a lime wheel and additional mint leaves.

    Just use coconut water instead of coconut cream, if you want a lighter option
