You don’t want to miss this Frozen Coconut Mojito! The delicious flavors of lime and coconut come together in this ultimate summer frozen cocktail.
We went camping last week to the most amazing RV resort on the Guadalupe River. The place had a fabulous pool and so many activities for the kids on top of the gorgeous river location.
After a fun day in the sun, the hubby and I were in the mood for a summer cocktail. Since there was a Walmart right down the street, I sent him off to grab us a few supplies. (Our camper is stocked with many of my favorite gadgets, like my Keurig Mini and Nutri Ninja, but no adult beverages…)

He likes a Michelada (beer-based Bloody Mary) and I love drinks made with coconut rum. (In fact, I did an entire summer series a few years ago based on tropical drinks. See them all here: Tropical Drink of the Day.
I also love a good Mojito and the combination of the coconut and mint was super yummy! The photos just don’t do it justice.
