Ham, Broccoli and Cheese Muffin Cups
1 cup of chopped ham
1 cup of shredded cheese, plus a little extra for sprinkling on top
1/8 cup finely diced onion
5 broccoli spears, chopped very small (I did mine in the food processor so my son would not spot the broccoli)
2 oz cream cheese, softened
1 teaspoon of garlic
salt and pepper
Preheat oven to 400 and lightly grease muffin tin.
Combine all the ingredients with fork, keeping a little bit of cheese set aside.
Separate biscuits. Then one at a time, roll very flat with a rolling pin, place in muffin tin and fill with the ham, broccoli and cheese mixture. Sprinkle a little extra cheese on top of each biscuit
Bake for 15 minutes. If you find your biscuits are turning brown on top too quickly, cover lightly with foil.
