Menu Plan Monday – 2/25/12

Happy Monday Everyone!  It is time for another menu full of healthy menu ideas.

I hope you had a fun filled weekend.  My weekend was busy!  I woke up super early on Saturday and drove downtown to attend 1 day of Quiltcon.  After that, I had an hour to kill before my evening plans.  So of course, the best way to kill an hour- Nordstrom Rack!  I love that place, I even Instagramed some of my finds.  If you are on Instagram, we should be friends.  You can follow me here: http://instagram.com/scatteredmom

Here is my menu for the week:

Monday:  Pot Roast  (I even Instagramed my pot roast saga…)

Tuesday:  Leftovers  (hopefully there will be enough leftovers for every one to eat, if not I will make the kids quesadillas w/ the leftover pot roast.

Wednesday:  Healthy Sloppy Joe’s

Thursday: Pasta w/ Chicken White Beans and Spinach

Friday: Mini Meat Pies  (I’ll make these with the leftover sloppy joe meat)

Saturday:  Going out

Sunday:  Quick and Easy Chicken Tortilla Soup

We still have a bunch of berries left over from my hubby’s trip to Sprouts.  I will probably make one more batch of Double Berry Muffins as an after school snack for the week.

  1. Looks like a great menu. I love the way you plan for leftovers. I often do that too and it's such a time saver!

  2. That pasta does look really yummy! I'm going to check out your chicken tortilla soup recipe as I have been craving it lately.
