Menu Plan Monday – 1/2/12

Happy New Year, I hope everyone had a wonderful Holiday! For me, it was really difficult to get up at 6:30 this morning. We went out of town this weekend to celebrate the New Year and my daughters birthday and I am still worn out, even after going to bed at 8pm…
One of the things I got for Christmas is a Costco Membership. I am excited to head over there later this week to check it out. I have gone to Costco before with family and friends, but I haven’t ever had the chance to take my time to browse and compare prices.
I am planning on doing a some big batch cooking this week to get some meals in the freezer for the kids. I have a hard time sticking to a light eating plan if I cook a lot of big meals. So my basic plan for the next couple of weeks is to cook a light recipe 3 to 4 times a week and on the other nights my husband and I will have Soup/Salad/sandwiches and I will feed the kids from my freezer meals.
Wednesday: Soup and salad for the adults and salad and quesadillas for the kids. I will be making a huge pot of soup for us to eat this week.
Thursday: Creamy Ham and Potato Casserole. We have lots of leftover ham and this is a low-cal recipe.
Friday: Rice, black bean, chicken and cheese burritos. I am going to make a large batch so I will be able to put several servings away in the freezer.
