My freezer stock has gotten low so I did a little cooking for the freezer this weekend. I made enough veggie chili and barbecue chicken breasts to put 7 dinners away in the freezer. Tomorrow I will make a batch of Chicken Verde and will hopefully get 4 more meals worth of chicken out from it.
Here is our menu for the week:
Monday: Penne Alla Vodka (without the vodka)
Tuesday: Boca Burgers with Microwave Potato Chips
Wednesday: Red Beans and Rice
Thursday: Creamy Buffalo Bites
Friday: Pancakes for Dinner (by request…)
Saturday: I’m not sure what we’ll be doing this night, so I am leaving this evening unplanned.
Sunday: Easy Tex-Mex Bake – Lightened Up
