Lucky New Year’s Dish: Texas Caviar w/ Black Eyed Peas

I never liked Black-Eyed Peas growing up. They were a New Year’s Day tradition for our family and my parents always made us eat at least one bite for luck. I originally shared this recipe for Texas Caviar w/ black eyed peas earlier this summer, but the dish is so perfect for New Year’s, I wanted to re-post it today in case anyone is searching for a way to prepare black eyed peas for a party or their family. (If Mom had made this for New Year’s, there would have been no complaining. It’s that good, I promise!)
The main ingredients are black eyed peas, black beans, corn, chopped veggies, vinegar, olive oil and sugar. The flavors all come together for one great dish. Yum! It’s fabulous served with chips or as a topper on salads.
