Quick and Easy Dinner Solutions: Tex-Mex Cowboy Skillet

Nothing is better than putting together a hearty and filling dinner for my family in less than 30 minutes (and generally using only one pan.) It makes dinner prep a breeze!
We eat a lot of chicken dishes around here, and sometimes we want something different!
Manwich sent me a cute little gift basket with a few different varieties of their Sloppy Joe Sauce. I’m always on the hunt for quick and easy dinners the kids will eat without complaint, so I was happy to try them out.
I do have my own skinny, from-scratch Sloppy Joe recipe here, but once I read that each can of Manwich is free of artificial flavors and preservatives plus offers a full serving of vegetables, I was even happier to taste-test them all!)
My parents were in town this past week, so I had plenty of taste testers for my Manwich experiment… They requested not to be photographed, though, lol!
First up, was 2 skillets of Sloppy Joe’s. (Both with ground turkey.) One with the Bold sauce and one with the original Original sauce. (I had a small amount of frozen onion/bell pepper mix left in the freezer, so I threw it in with the bold Sloppy Joe mix.)
The taste test results were split pretty even on who liked which flavor best. (What surprised me, was that I preferred the bold and my hubby preferred the original! – Normally, that preference would be flip-flopped.)
To test out the third Manwich Sauce flavor, I decided to get a bit creative. There are a ton of Manwich Recipes on their website. I browsed around, until I found one I liked. I changed the original recipe up a tiny bit to adapt it to our preferences, and we loved it!
You can’t go wrong with the flavors of beef, beans, cheese, tomatoes and salsa! The best part is that the dish was simple and ready in less than 30 minutes. (I started the water for the pasta to boil at the same time as browning the meat. By the time the pasta was done, everything was ready to put together and serve.)

Description

Ingredients
- 1 pound very lean ground beef or turkey
- 1 can (15 oz each) Manwich® Original Sloppy Joe Sauce
- 1–cups water
- 1/2 cup onion chopped
- 1 can of black beans, rinsed
- 1 cup of frozen corn, thawed
- 1 tbsp Worcestershire sauce
- 1 cup thick and chunky salsa
- 1.5 tsp dried cumin
- 1 tsp dried garlic
- 1–1/2 cups dry elbow macaroni, uncooked
- 1 cup (divided) shredded Colby & Monterey Jack cheese
- salt and pepper
- sour cream (optional)
Instructions
- Start the water boiling for pasta. Cook the pasta “al dente” (according to package directions.)
- Brown ground beef and onions in a large skillet over medium-high heat. Drain away any excess grease.
- Add Sloppy Joe sauce, water, salsa, Worcestershire, cumin, and garlic to skillet; stir to combine. Bring to a boil, then reduce heat to medium.
- Add beans and corn and thoroughly mix to combine.
- When macaroni is ready, drain and add to meat mixture, stir to combine.
- Add 3/4 cup of cheese to the skillet, and gently stir to mix in the cheese.
- Top with 1/4 cup cheese; cover and let stand for 3 minutes or until cheese melts.
- Serve and top with sour cream if desired.
