The kids and I have been busy crafting for the upcoming Fourth of July holiday.  We’ve been making shoelace bracelets, beaded t-shirts, embellished flip flops, and this afternoon, we made these adorable Patriotic Ice Cream Sandwiches.

And yes, they definitely taste as good as they look!

If you do one thing in the kitchen this summer with the kids or grandkids, these little sprinkle-dipped Ice Cream Sandwiches are a must make.  They are so quick and easy; the kids will have a blast dipping the sandwiches into the sprinkles and then eating them too!

All you need to make these Red white and blue Ice cream sandwiches

This simple sweet treat is the perfect hands-on project for the kids, plus depending on the sprinkles you chose, they can be a great little party craft for almost any occasion.

To make the treats, cut the sandwiches into 2 to 3 pieces (leave the paper on when cutting – you’ll avoid getting fingerprints on the sandwiches.) If you want to add a popsicle stick, just press the popsicle sticks all the way through the sandwich.

Dip the sandwich into a bowl of sprinkles.  Don’t forget to add a bit more to the top.

That’s it!

Place the ice cream sandwiches on a flat tray and return to the freezer for about an hour to firm back up.

Or…

Eat them right away!

Yum!

Instructions

  1. Line a baking sheet with wax paper.
  2. Cut the sandwiches into 2 to 3 pieces (leave the paper on when cutting – you’ll avoid getting fingerprints on the sandwiches.)
  3. If you want to add a popsicle stick, just press the popsicle sticks all the way through the sandwich.
  4. Dip the sandwich into a bowl of sprinkles, turning so you cover all sides.  Use your hands to add more sprinkles to any areas that nees to add a bit more.
  5. Place the sandwiches on the lined baking sheet and return them to the freezer until the sandwiches re-harden.

    Well, I did take them to pickleball. We played a few games then ate them. So, they did last at least an hour in the cooler packed with ice on top of the Tupperware container and ice on bottom. Before we left (about 2 hours) the sticks pulled out and the cookie stuck to waxed paper. I brought them home…threw them in the freezer. Just thinking about them made me curious…did they freeze ok and able to eat? Heck, yes…I just devoured one typing you this message. Now I know I can invite my neighbors for a front porch treat with the leftover treats. Thank you so much!
    PS I cut the bars in half. If you are making for adults…cut in half.
    You are correct…don’t take chances…put in freezer if you go to someone’s house. I was lucky…you may not be just using the cooler.

  3. How would you suggest me packing them to take to a cook-out? Layer on wax paper or parchment paper in Tupperware. Lots of ice on top and below in cooler?

      If you don’t have a freezer handy, I don’t recommend taking them to a cook out. Ice cream sandwiches melt like crazy.
