- Strawberry cake mix | I used one box of 15.25 oz store-bought strawberry cake mix. (Another alternative could be a white cake mix with two tablespoons of strawberry jello powder added.)
- Baking powder | Baking powder is added to help the cookies rise.
- Eggs | I used large eggs to make these cookies.
- Oil | I like to bake with canola oil, but any mild-tasting oil works well.
- Powdered sugar | Powdered sugar is used for rolling the cookies. (You drop the dough balls by the spoon full into the powdered sugar and roll it around to make it firmer and easier to transport to the baking sheet.) The powdered sugar also accentuates the pretty crinkle texture
How To Make this Strawberry Cake Mix Cookie Recipe
1 Preheat your oven to 375°F. Line a large baking sheet with parchment paper or a silicone mat.
2 Add powdered sugar to a small mixing bowl and set aside.
3 In a mixing bowl, whisk the strawberry cake mix and ½ teaspoon of baking powder until blended. In a larger mixing bowl, use a hand mixer to blend 2 large eggs and ⅓ cup vegetable oil until combined. Then add the contents of the dry ingredient bowl into the larger bowl and mix with a hand mixer (or your stand mixer) until the ingredients are blended.
4 Use a 1-tablespoon cookie scoop to scoop out the cookie dough and drop the cookie dough into the powdered sugar. Roll the dough into a ball and ensure it is coated with powdered sugar. (For larger cookies, use a medium cookie scoop.) Repeat until you have rolled all the cookie dough.
5 Place each coated cookie ball on the prepared baking sheet about 2 inches apart.
6 Bake for 8-10 minutes or until the tops have tiny cracks and the edges become slightly browned. Remove and allow the baking tray to cool for 5 minutes, then transfer the batch of cookies from the baking pan to a wire rack and cool for an additional 10 minutes.

Yes, these cookies freeze well. Wrap the baked cookies tightly with plastic wrap or place them in an airtight container. Freeze them for up to 3 months. After removing from the freezer, allow the cookies time to come to room temperature before consuming.
You can also freeze the dough balls before baking.
Place the dough balls on a cookie sheet and place the sheet into the freezer for an hour. You can then transfer the dough balls to a freezer bag or air-tight container. The cookie dough balls will last up to 3 months in the freezer. When ready to bake, place the frozen cookie dough balls on a baking sheet 2 inches apart and set aside. Allow the dough to come to room temperature (about 20ish minutes.) Then bake for 8 to 10 minutes at 375 F. (I have read that these cookies can be baked from frozen, however, I have not tried it, so I dont know if baking from frozen would require additional baking time.)
