My son recently joined a new basketball league with a few of his scouting buddies. This means he gets to go play basketball at the park with his friends- while the lil Missy gets left out. (Poor lil‘ Missy… ☹ )
On this particular Sunday, the house happened to be clean and there was a good football game scheduled. One of the other dads was picking up my son from practice and we decided to invite them over afterward to have pizza and watch the game with us.
We were ordering the pizza for delivery and I thought making brownies with my Missy would go a long way in cheering her up. (And it did!)
We all know spending time with the kids in the kitchen is good for them- it’s great quality time, gets them off the electronic gadgets and boosts their self esteem since they feel like they’re contributing. I always keep a few boxes of Pillsbury® Brownie, Cake Mixes and Frostings in my pantry for times just like these! (And luckily, I just stocked up on my last trip to Wal-Mart!)
How yummy do these Brownie Sandwich cookies look? The best part, since they’re made from the Pillsbury® Brownie Mix and Frosting, the cookies are a snap to put together.
Bake… Frost… Sandwich… You’re done!
One thing to note about these brownie cookies is that the recipe is slightly different from the recipe on the box. (Yes- my first cookies looked like this… I ended up letting them cook a bit longer and made brownie brittle from these.) After a quick google search on why my cookies spread too thin, I reduced the egg and oil and added extra flour. another person recommended letting the batter sit for about 30 minutes. Which I did- and they came out pretty perfect!

Description
These Easy Brownie Cookies are crispy on the outside with a delicious fudgy and chewy center. Put two together with a sweet, creamy filling and you have the easiest Brownie Sandwich Cookies ever!
Ingredients
- 1 package fudge brownie mix (13×9-inch pan size)
- 1 cup all-purpose flour
- 1 egg
- 1/2 cup water
- 1/4 cup oil
Instructions
1. Preheat oven to 350°.
2. In a large bowl, beat brownie mix, flour, egg, water and oil until well blended.
3. Let batter stand 30 minutes.
4. Drop dough by tablespoonfuls onto baking sheet, 2 inches apart.
5. Bake 8-10 minutes or until set. Remove move cookies from pan to cool completely. You can use your spatula to flatten the tops of the cookies a bit if needed.
6. Spread frosting on flat side of cookie. Top each with 2nd cookie and gently press together.
