Woo-hoo, we made it to Spring Break!
I don't know about you guys, but this was one rough winter...
We had a couple rough illnesses that we passed back and forth between all family members. There were homework struggles, some not so great grades, multiple meetings with teachers, extra before and after school tutorial sessions, and on top of all that, we've had delay after delay on our new home building project. You name it, we struggled with it.
Good news is, I think we've now turned the corner on grades and everyone is passing social studies!!! Aanndd, only 9 months behind schedule, we finally broke ground on our new house (Fill is coming today)
Fortunately for us, the timing of Spring Break in Texas is almost always right on the mark. We start the month cold, but by the time spring break rolls around, the weather always starts to warm up and it's perfect timing for celebrating the end of winter and beginning of Spring. (Plus it's just so great to have a 9-day break from waking up early and homework.)
We have a camping trip scheduled for Spring Break this year at a campsite near the Sam Houston National Forest. I specifically chose this campground because of their great heated pool and the fact we would be so close to Houston. (I want to spend a day or two visiting the Museum District, the Zoo and maybe even NASA!)
On my last trip to Kroger, I stocked up on all sorts of yummy pantry essentials for our camping trip. (Love Shopping at this Kroger - it's so clean and new, with the best produce. - Marshmallow Cream
- Strawberries (room temp)

Instructions
- Line up your RITZ Crackers.
- Top with a layer of hazelnut spread, a layer of marshmallow cream and top with a cut strawberry. (cut side up)
- Enjoy!
Notes
Recipe tips:
- Ripe strawberries at room temperature work best.
- Place the cut strawberry face up (cut side up) onto the marshmallow cream. (Helps prevents the strawberry from sliding off the cracker.)
