School is starting back up and our schedule is about to get busy with everyone’s different activities. I definitely need to start thinking about adding some quick and easy meals to our meal plans.
The kid’s activities don’t always leave me much time in the evenings to get dinner on the table, so I frequently rely on pre-cooked chicken and beef to help me put together quick meals. To keep dinner prep easy, I like to cook chicken or hamburger/turkey in bulk (either in the crock pot or oven or stove top) and I always try to pick up a couple of rotisserie chickens when I go to Sam’s. I portion the meat up and freeze it in meal size servings.
