A Blueberry Galette is a dessert you can make any time of the year, but it’s so good when you can get fresh summer blueberries. (Don’t worry though; frozen blueberries work really well too. I like to use frozen wild blueberries when local blueberries are not available.)

- Pie crust | Make your own pie crust or use store-bought. Either option works well.
- Blueberries | As mentioned, fresh or frozen blueberries work well. I usually keep a bag of blueberries in the freezer so I can make this recipe or throw blueberries in my morning smoothie.
- Basil leaves | Fresh basil leaves are a must! Please do not substitute dried basil. You won’t get the same taste.
- Cornstarch | To help thicken up the blueberries.
- Lemon Juice | I always prefer fresh lemon juice, but if you are in a bind and have run out of lemons, jarred lemon juice will work too.
- Sugar | Granulated sugar works well. Just a touch is needed to add to the blueberries and to sprinkle over the pie crust. (optional: I love to sprinkle turbinado sugar over the crust before baking for an extra bit of crunch.
- Egg | optional step: Brushing a beaten egg over the crust will give the baked crust shine and color. This step is optional but makes for a pretty pastry.
How to make this Easy Blueberry Galette Recipe
1.If using premade pie crust, remove it from the fridge and let it come to room temperature. Preheat the oven to 375 degrees Fahrenheit.
2. Combine blueberries, basil, lemon juice, and sugar in a mixing bowl.
3. Unroll the pie crust onto a parchment-lined cookie sheet. Dump the blueberry mixture onto the pie crust, leaving about a 2-inch space around the edge of the pie crust.
4. Fold the edges of the crust over onto the blueberries. Brush the crust with the beaten egg and sprinkle with sugar.
5. Bake for 25-30 minutes or until blueberries are bubbling and the crust has turned a golden brown.
6. Let the pie sit for a few minutes before cutting and serving. Serve with more blueberries or your favorite vanilla ice cream.
Blueberry Galette Recipe Tips
- Prepared pie crust makes this recipe super quick to prepare, but if you want to make your own, you can use your favorite homemade pie crust recipe or follow the crust recipe in this Deliciously Easy Apple Galette.
- To really make this recipe even faster, you can use canned blueberry pie filling instead of the blueberry/lemon/sugar mixture.
- Take the lemon out of the fridge while you prepare the other ingredients. I find it easier to juice a lemon if it has warmed up slightly.
Blueberry Galette Recipe Variations
- Fresh or frozen pie crust both work well. For added flavor and crunch, sprinkle the crust with toasted almonds, pecans, walnuts, or turbinado sugar.
- Use a combination of different fruit for the filing.
- Add a teaspoon of cinnamon or nutmeg to the fruit filling.

- Omit the basil and use mint or lavender instead.
- Fancy up the galette with sprinkles or other cake toppings.

What is the difference between a galette and a pie?

How do you keep the galette dough from getting soggy?

Blueberry Galette is a delicious dessert bursting with blueberries in a flaky pie crus. So easy to make, and it comes together in just about thirty minutes! Serve with a scoop of vanilla ice cream for an over-the-top treat.
- 1 pie crust
- 1 1/2 cups blueberries
- 1/2 lemon
- 1 Tablespoon sugar (plus more for sprinkling)
- 1 egg, beaten
- optional (but recommended:) 4-6 minced basil leaves (about 2 teaspoons)
- Preheat the oven to 375º.
- Combine blueberries, juice from lemon, sugar, and optional basil in a mixing bowl and mix.
- Unroll pie crust on a parchment-lined baking sheet.
- Dump the blueberry mixture in center of pie crust, and spread to about an inch and a half from the edge of crust.
- Fold pie crust up over berries, brush with beaten egg, and sprinkle with sugar.
- Bake in the center of the oven for about 25-30 minutes until the crust is golden brown and the blueberry filling is bubbling.
- Let cool 5-10 minutes before slicing.
- Serve with ice cream if desired.
You can, of course, let this cool completely before slicing. It will slice much better as the filling has had time to set up, but honestly, it’s so good warm with a scoop of vanilla ice cream!
