Super “Veggie-riffic” Chili Mac (you’ll never guess the secret ingredient!)

Do you ever feel like you need to get more veggies in your kids, but just can’t get them to eat any? Times like these, we moms have to get creative in hiding the veggies! (And the older they get, the harder it is…)
I did just that in this Chili Mac dish! It turned out pretty good! Read on to find out the secret ingredient…

Want to know my secret ingredient? Here it is:

Yep, It is frozen Cauliflower! (The kind that comes with cheese sauce.) I used about 3/4 of this 24 oz bag of cauliflower and no one could tell it was in there.
Here is the recipe:
Chili Mac with Hidden Veggies:
Ingredients:
1 1/4 cup uncooked elbow macaroni
2 cans chili with beans (or your own leftover chili, that’s what I did)
24 oz. frozen cauliflower and low-fat cheese sauce (I ended up only using about 3/4 of the bag- use as much as you want)
3/4 cup shredded cheddar cheese
1 tbsp onion powder
1 tbsp chili powder
up to 1/4 cup of milk (optional)
Salt and pepper to taste
Directions:
Cook macaroni according to package directions.
In a separate bowl, cook the cauliflower according to package directions. After cooked, chop cauliflower into smaller pieces.
Combine the macaroni, chili, cauliflower, shredded cheese and spices. Cook over medium heat until cheese is melted. I added just a bit of milk at this point to help the cheese melt in, but this is optional.
Dig in!
