If you loved pop tarts as a kid (and who didn’t?), you’ll find yourself returning to this recipe over and over again!

These pop tarts are made with rich, flaky pie dough stuffed with sweet blueberry filling. If you love blueberries, you will love these pop tarts. I like to top them with a layer of icing and colored sprinkles. It makes them look so festive.

These pop tarts will stay well on your kitchen counter for a day or two, but placing them in the fridge is best so the icing stays nice and firm, and the sprinkles don’t fall off.

Or make a batch, freeze them, and pull them out when the craving hits.

  • Pie crusts | Two 9-inch pie crusts. I use store-bought for ease, but you can use a homemade pie crust recipe.
  • Powdered sugar | For the glaze.
  • Whole milk | I used whole milk to mix with the powdered sugar; any milk will work
  • Sprinkles | I used blue and purple sprinkles to dress up the pop tarts, but use any color combo you want! Red and green for Christmas or pink for Valentine’s Day-themed pop tarts.
  • Blueberry pie filling | These pop tarts are filled with Canned blueberry pie filling, but you can easily make your own filling if you wish. If you have fresh blueberries, you can make this blueberry jam recipe instead of the pie filling. Other flavored jams or pie fillings work well, too.
  • Cold water | I used a touch of cold water to seal the edges of the pop-tarts.

How To Make Homemade Pop Tarts

1 Prep: Preheat your oven to 450 degrees Fahrenheit. Roll out each pie crust and cut out 12 4 x 3-inch rectangles.

2 Make the Pop Tarts: Place a generous spoonful of blueberry pie filling on six pie crust rectangles. Run a finger dipped in cold water along the edge of the rectangles topped with pie filling. Top each pop tart with the remaining rectangles and use a fork to crimp the edges.

3 Bake: Bake the pop tarts for 11 minutes. Allow the pop tarts to cool while you are making the frosting.

4 Make/add the Frosting: Whisk together the powdered sugar and milk until smooth. Spoon a generous amount of frosting onto each pop tart and top with sprinkles.

  • If you let the pie crust come to room temperature on the counter, it will be easier to work with. This will also help prevent the crust from cracking when you roll it out.
  • Store-bought pie filling is definitely the easiest route, but you can always make your own or use my blueberry jam recipe.
  • Make sure you don’t overfill the pop tart. Too much filling can cause the pop tarts to burst open in the oven. Aim for about a tablespoon of filling per pop tart.
  • A pizza cutter makes it easier to cut the dough.
  • Seal the edges properly to prevent your pop tarts from leaking. Use a fork to press down the edges of the top and bottom crusts together. This ensures a good seal and gives your pop tarts that classic, nostalgic look.
