We just got home from one of the best vacations ever! The kids and I spent several days by ourselves in a beachfront hotel. On Saturday, my hubby flew in to meet us and we drove about 45 minutes down the coast to a new location where we stayed another 6 days.
Eating out while on such a long trip can get expensive, so we always try to stay at hotels with a kitchen so we can go to Walmart for groceries and prepare the majority of our meals. You’d be surprised at the variety of meals you can come up with around a few basic ingredients like chicken, eggs, beans, avocados and tortillas.
One of our favorites dishes from the trip was this Avocado and Bacon Chicken Salad recipe. It’s so easy to make. The kids went crazy over it when I served it on freshly baked croissant rolls while the hubby and I usually ate it over lettuce (just mix it right in- no additional dressing needed) or stuffed into an avocado.
What makes this chicken salad extra special is the addition of the avocado and of course, the BACON! (Bacon makes everything better, lol.)
On my last trip to Walmart, I bought the Jimmy Dean® Hickory Smoked Bacon. It’s a premium bacon and so very tasty… The Jimmy Dean Bacon is the perfect addition to breakfast, lunch and even dinner. There is also an Applewood Smoked Bacon that would be really good in a breakfast casserole- I’m definitely going to have to try that next.

Recipe suggestions: You can eat the salad right away, but for the best flavor make it at least 30 minutes ahead to allow time for all the flavors to combine! If making sandwiches, the addition of a sliced tomato is even better.
Avocado and Bacon Chicken Salad
- 3 cups diced cooked chicken
- 1 1/2 avocados diced
- 7 strips of Jimmy Dean® Hickory Smoked Bacon, crumbled
- 1/2 cup mayo (you can use more or less depending how creamy your avocados are)
- salt and pepper to taste
- optional: tablespoon of finely chopped cilantro
- Combine chicken, avocado, optional cilantro and almost all of the crumbled bacon (reserve a tablespoon or two for garnish.)
- Add mayo and mix until thoroughly combined.
- add salt and pepper to taste.
Serve chicken salad on a delicious roll, over lettuce or stuffed in an avocado.
